Raw Food Giveaway!

I recently posted a review on dehydrated raw breakfast products made by The Goodness Company. I’m a big fan of the nutritional and ethical philosophy that this company embodies. Taste wise I have also really enjoyed the products that I have sampled so far. And following the tradition of the award, I will tell y’all 7 random things about myself:

  • I truly believe one of the greatest pleasures in life is a cup of tea. I love how this is something which transcends across all cultures! Tea is simply amazing. Amen.
  • It may not suprise you then then that I collect tea cups. I have a beautiful assortment from giant Alice in Wonderland style ones to vintage hand painted fine china (my boyfriend really spoilt me with those).
  • The first solid food I ate as a baby was watermelon and mango pieces. Yum!
  • I love public speaking. Freak? I know.
  • I recently found out I get claustrophobic and it took me completely by suprise. I was stuck in gridlock traffic in the middle of the Sydney Harbour Tunnel (which is under water for those who aren’t Aussies) and utter panic struck… I was literally hyperventilating. Now I will always take the bridge and the open scenic root.
  • I have a tendency to not talk a lot… you may have guessed this from the anecdote in the previous point.
  • Yoga is my ultimate healer.
  • I am head over heels in love with avocados. Must have at least one every day! They are a super beauty food – don’t be scared of healthy fats.

Well, I think that’s more than 7, but hey, I do like to talk :)

Taking Five with Charlotte from The Goodness Company + Raw Product Reviews

Recently I was blessed enough to receive a package of raw vegan dehydrated products from The Goodness Company to try and share with you, my lovely readers. I was familiar with the company through looking at their website and from this I was struck by what an innovative and appealing concept it boasts, in terms of raw foods and nutrition.

Since becoming interested in raw myself, and experiencing what an amazing effect including lots of raw foods can have on one’s health (for me, it particularly helped with my digestive issues), I have tried almost all the dehydrated products I could find on the shelves of health food stores. Some have been delicious, whilst some were disappointing. The thing which I noticed though, is that there seemed to be a lacuna in the Australian raw food market in terms of crackers, cereals and granola – the things people often can’t make themselves because of issues such as not owning a dehydrator or being time poor. There just wasn’t a large selection of these products on offer and they were often hard to source. However, the Goodness Company changes all of that with an extensive range of raw foods, both dehydrated and fresh, which are being made readily accessible to health inspired hipsters around Australia.

So what was it about The Goodness Company that immediately grabbed me? I guess it lies in the great pleasure of finding like-minded people. Charlotte, the co-founder, was led to the power of live food nutrition through her and her family’s own health problems, namely gluten and dairy intolerance. This is a very similar platform to that which launched me into the world of plant-based healing, post discovering I had Coeliac’s disease. Yet what we share in common, as I’m sure many of my readers do too, goes much deeper than that spark of a journey. It is an overarching nutritional philopsophy built on the belief in treating our bodies with love through providing nourishment by consuming a plant-based diet of  full of organic, enzyme rich, whole foods. This means food that is free from gluten, dairy, refined sugar, animal products, artificial additives, GMO  ingredients, and that is instead low GI, naturally delicious, healthful, eco-friendly and sustainable, made with good intention, full of superfoods and positive energy.

So without further ado, here are Charlotte’s answers to my five ‘taking five’ questions that I asked her, followed by my review of two of the Goodness Company’s products.

Taking Five with Charlotte from the Goodness Company

Why are you passionate about raw foods?

I discovered raw foods after becoming disillusioned with the standard gluten and dairy free diet and its lack of nutrition about 4 years ago. When I started feeding my family on a high percentage raw diet I realized what an incredible effect the diet had on health, energy, vitality and general well being. Weight stablized, skin, hair and eyes sparkled and energy levels rose plus everyone’s attitudes to life became brighter. It was like a metamorphosis.  I found the higher proportion of raw nutrient dense and superfood enriched foods we ate, the lighter, healthier and happier we became. It is easy to be passionate about something when you see such dramatic and life changing results.

What philosophy does The Goodness Company embody?

We believe that food is medicine but it doesn’t have to taste like it.

Nutrient dense food properly prepared will give you abundant energy and vitality and well being. Our job is to mix, blend and dehydrate to create new combinations and tastes for ultimate taste, benefit and maximum nutrition.

We believe Mother Nature not scientists got it right.

We use as much un-hybridized heritage fruits and vegetables as possible. Food with life force is important. If the food we eat can’t regenerate itself, if it is cooked (dead) or has no viable seed how can it energize our bodies?

Your products say that they are ‘made with love.’ Could you say a little more about why positive energy is important in our food?

Positive energy towards everything in life causes very different outcomes. We love what we are doing and what it can do for not only ourselves but for our clients. If we didn’t believe this we would not be hand producing our products. Food should be a labour of love. It is both enriching and nurturing.  We love that and what we do, but more importantly what it does for us.

What are some of your top super foods to include in ones diet?

Alkaline rich almonds, spirulina, algaes and sea vegetables, coconut oil, green leafy vegetables, carob and cacao, goji berries, maca, bee products and fermented foods.

If you had to serve a three-course meal to convert someone to the taste and nourishment of raw foods, what would you make? 

Young coconut ravioli stuffed with tree mushrooms and truffles, raw green tea noodle laska and a seaweed salad, followed by a chocolate and raspberry tart.

I threw that last question in just for fun as I love hearing other peoples’ ideas on nutritious yet decadent meals for inspiration. Plus it makes a great point that a plant-based diet is anything but bland and boring!

Now, lets take a look at some of the actual products. In this post I will be reviewing the Goodness Company’s dehydrated breakfast options.

Firstly, some brief thoughts on breakfast as it relates to us here. Whilst there are many raw choices for your first meal of the day, such as smoothies or puddings, these are often time consuming. In this busy life we sometimes just need a nutritious breakfast option that is ready to go in the morning! That is why it can be really helpful to have a nutritious cereal on hand. And no, I’m not talking about anything you might find at the supermarket, which are heavily processed and generally full of sugar. I mean a cereal that is completely natural as well as being low GI so that it will both give and maintain energy. What we eat in the morning really is important for setting up the rest of our day nutrition wise.

Product Reviews

 ”Crackle Crunch”

I was excited to try this as I haven’t seen anything else like it on the market. Basically it is smashed sheets of dehydrated activated buckwheat plus some other yummy ingredients, depending on the flavour. It comes in either ‘Chocolate’ or ‘Orange.’ First I read the ingredients and nutritional stats. I love that I could count the number of ingredients on my fingers and that, more importantly, they were all natural and familiar. I tried some of the Chocolate Crackle Crunch straight out of the bag as a dry snack. Some of the chunks were quite thick, so were perfect for eating this way. For those who are familiar with the taste of raw cacao powder, that is the prominent flavour. For those who haven’t tried cacao powder, imagine the taste of hot chocolate but cleaner and crisper on the palate (and much better for you as it isn’t processed and contains all the lovely antioxidants!)

There is sweetness to it, however it is quite mild and not overpowering the way I have found some raw cereal products to be. I think the more savoury buckwheat cuts the cacao and sweetener nicely. Although I’ve generally never been a big chocolate person, I really liked it and think that if you are a chocolate person then this will knock your socks of baby! I also tried the smaller / thinner ‘flakes’ in a bowl with almond mylk and berries. Chocolate and berries = winning combo. This was easily my favourite way to eat it – a great replacement for your usual bowl of Special K (read: processed sugar and gluten marketed as healthy) or your kids’ morning Coco Pops (aka hyperactivity and learning difficulties in a packet). I also thought that a chunkier piece of the Chocolate Crackle Crunch could easily replace a chocolate biscuit to enjoy with your tea.

The orange flavour was also good. Again, not overbearing but strong enough to give that citrus-y kick. This was fresher and lighter than the chocolate version and, being fruity, reminded me of summer. Again I dished it up with some of my homemade almond mylk which is a serving suggestion I definitely recommend. The taste is neutral enough without being boring that I’m sure children would also love it. Can be eaten by the handful as an easy raw snack too.


“Granola” 

Whilst I really enjoyed the innovation of the Crackle Crunch products and think they are totally delicious, the granola took out the gold medal in my books.

Before finding out I was a Coeliac, I was a long term member of the granola breakfast club. It was one of the things the thing that I missed most when I went gluten-free. There was simply no replacement for a decadent bowl of crisp nutty oat clusters in the mainstream market. I couldn’t find any gluten-free granola products, only the sorry gluten-free mueslis that tasted like cardboard attempting to be disguised by sickly amounts of dried fruit. Since my early days on the hunt for gluten-free breakfast cereals there have (thankfully) been many innovations, as the demand for such  has become greater. Yet the only type of product that has surpased traditional granola, in my opinion, are the raw options now available. All hail the rawnola! I could tell just from looking at The Goodness Company’s version that it was a surefire winner: golden clusters of yummies such as almonds, pepitas, buckwheat and sour cherries. Into my bowl it went with some berries and my almond mylk (I see a pattern forming here) for one sexy breakfast experience! Yes, moaning ensued… don’t judge me.

The granola is full of flavour with a slightly caramalised taste. This is nicely balanced by the lemon and vanilla so that is smooth and not too sweet. I didn’t need a large quantity and it kept me full and energised for hours on one of my working days, so I know this cereal has real staying power. In terms of nutritionals, this comes from the combination of complex carbohydrates, healthy fats and being low GI to keep blood sugars balanced and a steady release of energy. This is what we need from breakfast, rather that the spike in blood sugars that conventional cereals invoke, followed by a crash and the craving for more refined sugars and carbohydrates – a dangerous cycle. For healthy raw breakfast fare and snackage, I definitely recommend trying this granola. Like the Crackle Crunches, it too can be eaten dry, straight out of the bag, as a muesli bar or cookie replacement. Paired with my cup of organic peppermint tea it was delish.

A big pat on the back to the team at The Goodness Company. It’s great to see quality raw food made available to the masses. Everything can be purchased through the online store on the website and the products are also stocked in local stores, such as my beloved Taste Organic.

Thoughts on Health, Balance & Nutritional Medicine

In my opinion, looking at health from a holistic perspective is imperative. In order to understand ourselves and our health needs we must engage on a level of wholeness. Everything is is interconnected within the world and the individual. Nothing to do with health, disease or healing happens in an isolated environment.

Health is not simply the absence of disease, it is so much greater than that. I believe in the interconnectedness of body, mind and soul. This means that for true health to be present one must be nourished and balanced on a physical level, an emotional level, and a spiritual level. When these three components of the being are cared for and in harmony with one another and the outside world, then we can achieve the level of vitality, happiness and love for the self and those around us, which constitutes real health.

Stemming from this, I categorise the causes of illness as being directly related to imbalances in one of these three facets of the human being. This is an age old notion which many of the traditional healing systems in various cultures embody, such as Yin and Yang theory in Traditional Chinese Medicine, or the three Doshas in Ayurveda. There are so many factors that can cause problems (imbalances) in the physical, emotional and spiritual bodies, especially in our contemporary day and age.  Since all are tightly linked, what effects one will have a domino effect upon the others. This leads to ‘dis-ease’ (exactly the opposite of being at ease) and manifests in a plethora of different forms, like gastrointestinal problems, depression, or cancer.

In such a case, ‘symptoms’ are really the warning signals sent by our body to alert us to the fact that something is not right at the core of our being. Whilst experiencing symptoms may be very unpleasant, we must recognise that they are actually amazing things that we should be ever thankful for! This is nature’s way of urging us to make changes and take care of our health – to restore balance in mind, body and soul. If we simply suppress the symptoms with drugs, we are not helping anything, but rather ignoring an important message for true healing. Instead we must listen to our bodies, find the cause of the symptoms, and remove this cause, whilst simultaneously providing ourselves with the best nourishment, physically and mentally, that we can offer in order to create an optimum environment for healing to take place.

Using nutrition as medicine is a wonderful approach to naturally restoring balance to the multiple levels of the being and thus bringing the mind, body and soul to a place of ‘ease’ rather than disease. Indeed, often the cause of illness can be removed or partially removed through nutritional strategies and likewise good nutrition is vital to creating a positive healing environment. I believe all forms of illness can be helped through nourishing the physical body and this will vibrate positively into the emotional and spiritual bodies as well, leading one towards achieving holistic health.

Raw Beetroot Dip Two Ways

Hi my name is Lolita and I’m addicted to beetroot.

I love it raw the best. I love it in my salads. I love it in my sushi. I love it in my wraps. I love it in my sauerkraut. I love it chunky or grated, fresh or fermented. I love it so much I just want to lick it all over.

What? I don’t think I have a problem.

Oooh, I forgot to mention that I also love it in my dips!

Here I share two recipes from Beetroot Lovers Anonymous. Enjoy.

Funky n Chunky Almond-Beetroot Pate (raw, vegan, gluten-free, sugar-free)

I came up with this recipe to use the pulp left over from making almond mylk. It’s a perfect way to minimise waste and also makes for an easy dip base.

Ingredients:

*Please use organic whenever possible

  • 1 medium beetroot, grated finely
  • 1 cup almond pulp left over from your almond mylk or 1 cup almonds soaked for 2-8 hours and blended
  • juice of 1/2 lemon
  • cayenne pepper to taste (I like it spicy)
  • high quality salt & pepper to taste

Method:

Simply place all ingredients in a bowl and mash / mix it all up with a fork until well combined. Fast & yummy.

‘Dance to the Beet’ Hummus (raw, vegan, gluten-free, sugar-free)

Ingredients:

* Please use organic whenever possible

  • 1 medium zuchini, peeled and roughly sliced
  • 1 medium beetroot, grated
  • 3 tbsp tahini (or until desired creaminess is reached)
  • juice of 1/2 lemon
  • 2 tsp caraway seeds
  • 1/2 – 1 clove of garlic (it is quite strong if you use a whole clove so adjust to your liking)
  • high quality salt, to taste
  • any herbs you like (optional)

Method: Add all ingredients to your food processor & blend well. Add more lemon juice and/or tahini if the consistency isn’t right yet. It should be thick and creamy like traditional beetroot hummus.

Both these dips are simple yet effective. The raw beet hummus is particularly good for entertaining and no one would know it doesn’t contain any chickpeas!

Serve with veggie sticks, crackers, cripsbreads, on top of salads, in lettuce or kale wraps, in sushi, spread onto rice cakes, on toast with cucumber slices… the options are endless.

Beetroot is a powerful healer. It is packed with beta cyanin which is a blood purifier and overall promoter of detoxification in the body, aiding the liver to do its job and helping prevent the build of fatty deposits.

This little purple superfood can also reduce high blood pressure, boost your happiness (as it contains betaine which stimulates seratonin production), and build or keep your immune system strong with a nutrient powerhouse boasting high levels of vitamin C, iron, folic acid, phosphorous, magnesium, vitamin B6 and more.

Raw Dining at the Sadhana Kitchen, Newtown

The Sadhana Kitchen just opened its doors this week in Newtown, Sydney. As it is run by the lovely Maz (who I became friends with at a raw vegan potluck some months ago) and her partner Sam, I knew it would be a niche of good food and vibes aplenty! So after class on Thursday afternoon, I hopped on a train from Central to Newtown where I met my friend Jodie and we proceeded to try out Sydney’s latest destination for nourishing  the mind, body and soul.

The Sadhana Kitchen is the kind of ‘best kept secret’ place you just don’t know is there until you find out about it. And then once you’ve found out about it, you won’t forget it! It’s tucked away off busy Enmore Rd, nestled alongside the Jivamukti yoga studio. As you turn down Wilson St it seems like a relatively empty inner city laneway, until you round the corner and find yourself in a hive of yogi energy and raw food love.

We started with cold-pressed organic green juices (how well do you know me?!) Jodie and I both opted for the Green with Envy juice of seasonal greens, celery, cucumber, lemon, apple and tumeric, which the menu says is to ‘cleanse the blood and chi.’ Cheers to that.

Following our dose of liquid alkalinity served to us in cute mason jars, we ordered from the raw lunch menu. The food was delicious and nutritious, bursting with flavour and enzymes, plus a side of positive vibrations!

Samadhi Quiche – ‘Spinach and mushroom filling topped with caramelized onions and smoky coconut crisps.’

A Tejas Taco - ‘served with walnut mince, salsa, guacamole and sour cream’ – with the Superfood Salad – ‘seasonal produce and home-grown sprouts served with chia seeds, gojji berries and hemp seeds.’

Jodie chose the quiche which she really enjoyed. I sampled a bite and it was delicious. The flavours were beautifully balanced and nothing was too overpowering. The caramerlised onion rings on top were the perfect touch! It was really different to the other raw quiche that  I tried in Byron Bay and that is what I love about raw foods! You can be so creative with them and really create unique dishes, which is just what the guys at the Sadhana Kitchen have done with this.

Being presented with an all vegan menu left me with the challenge of choosing from so many good things. Upon reading the description of the Superfood Salad I was already falling hopelessly in love. I had to have it (again, no prizes for guessing this. When my boyfriend saw the menu he picked that I’d get it straight off). Yet I also wanted to try one of the raw recreations of traditional foods and was eyeing off the tacos big time. So what’s a girl to do? The lovely Maz and Sam solved my dilema by making me a half and half combo so I got to have both (thanks guys!). I really appreciate this kind of flexibility when eating out, after all, life is fluid and flexibility rocks. Yes, this cafe is next to a yoga studio, but no pun intended. I loved every bite of my meal. Jodie was also impressed with the sample she tried of my taco and said the walnut filling was just like refried beans (only much healthier, of course).

Raw Chocolate Cupcake

Last but not least, a raw vegan cupcake fit for a yogi fairy princess! Maz is famous for her divinely guilt-free raw desserts which contain no sugar, gluten, dairy, etc. etc. Basically, only made from natural ingredients and superfoods and love. On my way out the door I overheard a lady ‘oohing and aaring’ over her raw vegan Mango Float. At the Sadhana Kitchen you really can have your cake and eat it too :) .

If you are a fellow Sydney-sider, do yourself a favour and make the detour off the bustling streets of Newtown to this little hideaway of calming nourishment. There you will dine on fresh, organic raw vegan fare whilst the beautiful goddess on the wall (who, by the way, has a striking resemblance to Maz) watches over you.

Sexy Nutrition: Sauerkraut

Get ready ladies and gentlemen, for we are bringing sexy back big time!

Great! you must be thinking. I mean, who doesn’t like lots of sexiness in their lives?And next you’re probably wondering ‘so what exactly does this sexy game plan entail? I want in.’

Well, today my answer to that is this: fermented vegetables!

Now if that doesn’t sound sexy to you, you clearly don’t know what sexy is I really don’t blame you. Probably not the first thing that comes to most peoples’ minds when then they hear the word ‘sexy.’ But give me a chance and by the end of this post, I guarantee you are just going to want to get down right dirty with your saurerkraut. (Too kinky? Maybe.)

Or maybe not! Welcome to a new way to think about our foods: Sexy Nutrition. The more we understand the amazing energy and power of plant-based nourishment, superfoods, enzymes, nutrients, vitamins and minerals, the more we can see why they ooze sexiness, both in the amazing right of nature and in what they do for our body and mind.

When we give our bodies pure living nutrition a beautiful energy exchange occurs. When we keep our inside healthy, we glow on the outside, feel confident, energised and adventurous – all key components of what it means to be sexy!

Today our star is sexy sauerkraut. In its raw and fermented form, sauerkraut is one of the sexiest foods we can consume for digestive health and overall well being. I was originally introduced to sauerkraut in my quest to heal my digestive system from the damage caused by Coeliac’s Disease. The practitioner who I saw was a big fan of the work of Donna Gates, nutritionist and author of The Body Ecology DietThe diet outlined in this book is designed to rebuild the immune system and help those struggling with immune disorders and candidiasis. One of the main principles is on rebalancing the bacteria within the body, for which the consumption of probiotic rich fermented foods is key.  I read Donna’s book (which I highly recommend) and began making my own fermented vegetables, otherwise known as raw sauerkraut, to consume daily. Sure enough it hugely improved my digestion. I found when I included kraut in my meals, symptoms such as bloating, feeling uncomfortable after eating, and having diarrhea drastically decreased.

So what is it that gives sauerkraut it’s sexy healing properties? Well, aside from the fact it is made almost entirely of raw veggies, we could say it’s thanks to two of sauerkrauts stunning features: probiotics and enzymes. Ooh yeah baby!

Probiotics are the friendly bacteria that we ideally want to have flooded throughout our digestive system. These pretty things help us maintain a healthy gastrointestinal flora, keeping the ugly bad guys (like candida albicans) at bay.  When we make raw kraut we allow the vegetables to culture and this process grows millions of beneficial lactobacilli bacterium that we can then easily consume! The fermentation process also means that the vegetables become predigested, making their gorgeous vitamins and minerals highly bioavailable and readily assimilated in the body. This is particularly helpful if you suffer from digestive problems, such as damaged intestinal villi (like I do) because it helps make it easier to get the valuable nutrition out of our food. Combine this with the naturally occuring enzymes present in raw kraut, which aid in the digestion of different macro nutrients, namely fat, starches and proteins, and you have a super digestive aid! Due to these properties, sauerkraut has long been known as a highly effective way to help with either diarrhea or constipation.

If all this wasn’t sexy enough (what, constipation isn’t sexy?), then you might also like to know that the probiotics, enzymes, vitamins, minerals and phytochemicals (also created during the fermentation process) in sauerkraut make the food a powerful immune booster, free radical scavenger and neutraliser of antinutrients found in a plethora of foods. Regular consumption of fermented veggies will help the body in ongoing cleansing, which I believe is vital to our physical and mental health.

Wow, the benefits of sauerkraut sure are sexy and amazing – hopefully i’ve convinced you of that! But you are probably dubious about whether it tastes as sexy as it sounds on paper. And here’s the good news, it’s totally delicious :) . The first time I tried it I will admit I was a little scared (read: made Dad try it first). The tang of the initial bite may take a moment to get used to, but after that I was totally hooked! I now make sure I consume it at least once a day, though ideally at both lunch and dinner, and I thoroughly enjoy every bite… mmmmm!

So if you’re wanting to get sexy sauerkraut into your bed belly, here’s how. And don’t worry, it’s easy as anything and requires no special equipment, just from some glass airtight containers.

Super Sexy Sauerkraut 

(raw, vegan, gluten-free, probiotic, sugar free, low GI)

Ingredients:

Make sure to choose organic whenever possible!

  • 1 head of cabbage (purple/green/or both)
  • Additional veggies  (Up to you. I like carrot, beetroot and celery)
  • Filtered water
  • High quality salt (either Celtic sea salt or pink Himalayan crystal salt)
  • Seasonings/flavoursome add ins (to your desired taste) – good choices are caraway seeds, ginger, cayenne pepper, lemon/ lime juice, cardamon pods, dill, mustard seeds, garlic, dried herbs, any spices you like, etc. Be creative!
  • 1-2 tsp probiotic powder or fermented blend (optional, but boosts the beneficial bacteria so I would recommend it if you have some… I use NuFerm Organic 2012 Probiotic Blend)
  • *Option: 1 tbsp naturasweetener such as raw honey (not vegan or low GI), yacon syrup, raw agave (though there are mixed opinions on whether this is healthy as it is still highly processed) – some sugar provides food for your good bacteria to feast and grow on.

Equipment:

  • Airtight glass jar or jars – enough to fit your cabbage and other veggies tightly packed.

Method:

1) Sterilise your utensils and jars by scalding them with boiling water. This ensures there’s no bad bacteria around to interfere with the fermentation process.

2) Shave your cabbage. Shave, grate or finely chop your additional veggies if you are choosing to use them too – whatever you prefer. I like to mix it up with grating or matchstick pieces.

3) Mix the cabbage and veggies in a bowl. Sprinkle or grind your salt on and mix thoroughly. Do the same with any seasonings or flavour add ins you are using.

4) Pack the mixture as tightly as possible into your jars.

5) Next you make your brine. Use about 1 cup filtered water and add your probiotic and natural sweetener, if you are using them. Mix with a spoon and then slowly poor over your cabbage and veggies in the jar. If making it the simpler way you would just be pouring your plain water into the jar now.

6) Use the base of your cabbage or a few celery sticks or any piece of vegetable that you can place on top of your mixture in the jars. This will help push the veggies down during the culturing process so that they stay submerged in the brine.

7) Tightly secure the lids of your jars. Place them in a warm area out of direct sunlight. I recommend putting the jars in a dish or tray as during fermentation the juices often seep out and it can be messy!

8) Leave your kraut to culture for 5-7 days. The warmer it is the shorter time period you need to wait. If it is quite cool you may like to leave them for even longer, such as 10 days. Do expect fizzing, this is natural and means your healthy bacteria are having a party in there!

9) When your culturing time is up, place jars in the fridge. Once they are chilled they are ready for your enjoyment :)  In their ferment state texture changes and they become much softer.

Here are two examples that I recently made:

On the left is simple purple cabbage with cardamon pods and cayenne pepper for a spicy, Indian inspired flavour. Right side is green cabbage and grated carrot with lemon juice and caraway seeds… light and fresh.

The kraut is delicious straight out of the jar, in my humble opinion. But it makes an even better accompaniment to a vast array of different foods. Here are some of the ways I get sexy with my fermented veggies:

  • In any salad… yum!
  • On top of raw crackers (p.s plus avocado & sprouts = heaven)
  • In gluten free wraps with salad & hummus
  • In raw wraps (like these)
  • As a condiment to raw vegan sushi 
  • To top brown rice cakes spread with dip
  • Mixed into kelp noodles topped with a favourite sauce (or in a kelp noodle salad)
  • On gluten free toast… I love Kimberly Snyder’s Avo-Beauty Sandwich recipe from her book The Beauty Detox Solution (you can read my review here)
  • Atop a hippie bowl of quinoa & veggies
  • In a little side dish as an accompaniment to any savory meal

Since the superfood properties of the sauerkraut aid in the digestion of starches and proteins, it is helpful to consume 1/2 a cup with any denser meals you eat. Ideally 1/4-1/2 a cup should be consumed once or twice a day. I aim to have some with both lunch and dinner. As you get used to it you can increase the quantity.
